ORANGE CHOCOLATE CHUNK CAKE

RECIPE:

BARofChoc Post-its ‘Orange Chocolate Chunk Cake’ by Manisha Shah

Preparation time:

Approx 1 hour (including cooling time)

Serves:

4-6

Ingredients:

56% BAR Nickels – 150 g

All-purpose flour – 120 g/ 1 cups

Baking Powder – 1 tsp

Baking Soda – ¼ tsp

No of Orange Zest - 2

Thick curd - 120 g/ ½ cup

Castor sugar – 90 g/ ½ cup

Oil – 80 ml/ 1/3 cup

Orange Juice – 125 ml/ ½ cup

Directions:

1. Grease or line a 6-inch pan with parchment or baking paper. Preheat the oven to 180°C.
2. In a bowl mix together the flour, baking powder, baking soda, and the zest of two oranges. Keep it aside.
3. In another bowl add the curd, sugar and oil and mix well till combined. Add half of the flour mix and half of the orange juice and whisk together. Add the remaining flour and orange juice and whisk till everything is well combined but do not over-mix the batter.
4. Throw in 3/4th of the chopped chocolate chunks/ Callets and fold into the batter.
5. Pour the batter into the prepared pan and tap the pan lightly on the countertop to remove any air bubbles. Add the remaining chocolate chunks/ Callets on the top of the batter.
6. Bake for 35–40 minutes or until the cake starts to pull away from the sides or use other toothpick/skewer to test whether the cake is baked well. Cool the cake on a wire rack and serve.
